Chinese dumplings [Jiao zi] with meat or vegetable fillings, are a traditional dish, essential during the holiday season. Fillings can be chopped vegetables, ground meat, seafood or any creative mixture. A skilled dumpling maker has a light touch and doesn’t break the thinly rolled dough, wrapping the edges with finesse. Dumpling shapes may be round, crescent, fluted around the edges or simply pressed together. Boil or fry to finish the cooking.
